Meringues
2 egg whites
110g (4oz) caster sugar
Separate egg whites into mixing bowl, whisk with wire whisk
attachments to stiff peaks, then whisk in half the sugar before
folding in the second half. Pipe or spoon onto baking parchment
and bake for 2-4 hours at 75-100°C. (Shorter time gives
soft centre)

Bread doughs
Use the dough hooks to mix. Supermarket bread mixes give
excellent results when dough hooks are used to combine
dry ingredients and liquid. Use the hooks to further knead
the mixture as advised on the packet before baking.
